I cannot take credit for this recipe. I got this recipe from another website but made a couple of alterations. I doubled the sun-dried tomatoes and added some fresh lemon juice.
1. Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente. Drain and set aside.
2. Place basil leaves and sun-dried tomatoes in a food processor. Pulse 4 or 5 times until blended.
3. In a large bowl, toss together the orzo, basil-tomato mixture, olive oil, parmesan cheese, salt and pepper and lemon juice.
Serve warm or chilled.

I made this for a dinner party last night and added chopped spinach – it was delish! Thanks for the recipe.

I made this for a bridal luncheon and the women were drooling over it! The smells of the sun dried tomatoes, basil, and parmesan cheese are delicious!

This is a great salad. My husband had trout and I had chicken on the grill…great with both! It was very fresh and light…tho I did do more sun-dried tomatoes and basil as I like both to be dominant in the meal! Topped with fresh parmesan cheese…nummy! Will definitely make again!
