This 4-ingredient recipe is SO easy you can stop at the store on your way over to a friend’s and mix it in the car!
In a serving bowl, dump the bag of broccoli slaw. Pour in the peas. Sprinkle in the peanuts. Douse it with the poppy seed dressing. Stir. Super easy and super yummy!
By the time everyone is ready to eat, the peas will be thawed and the salad still cold!
(Of course, if you need to double it, by all means, go for it. Then you won’t have to stash your leftover ingredients. This recipe is great to take for pot luck picnics.)
If you do make this on the way, plan ahead and take a bowl and spoon with you. That is all you will need!

To answer my own question – I was able to save up broccoli stalks for several weeks (we eat a lot of broccoli) and then after peeling the rough spots off, I ran them thru the food processor (a good mandleine would work too – mine is chintzy but worked ok). I added some carrots and I suppose good ole’ cabbage would work too. Then I blotted it with paper towels to get the extra water out – and it worked great. It takes a lot of stalks to equal the 12 oz the recipe calls for. So I just keep peanuts and poppyseed dressing around, and a bag of peas in the freezer -and stir it up with the amounts to taste.

WE love this. It is so easy and yummy. Positive reviews from picky eater 25-year old stepson, too.
I’d like to experiment with shredding my own broccoli slaw. Any recommendations.

This is my new favorite salad! Thanks so much for posting it. It goes well with beef, pork, or chicken. My family likes it with some crumbled bacon added. I like it either way.
