I love fennel! This simple salad is great with fish.
Peel the papaya. Use a vegetable peeler to produce a pile of very thin papaya slices.
Cut the fennel bulb in two and slice very thinly. This is easy and takes no time at all if you use a mandolin.
Mix the papaya and fennel. Add coaresly chopped cilantro.
Salt.
Drizzle on some good quality oil.
That’s it!
