My mother-in-law made this for me the first time I went to Nova Scotia with my fiance (then boyfriend) to meet her and the rest of the family. It instantly won me over and I make her make it every time I visit now!
Note: I can’t remember how much pasta to make, but I just cook however much feels good.
Cook pasta according to package directions. Refrigerate to chill.
Cut and prepare all vegtables and mix together in a bowl (peel cucumbers if you like, it’s your choice).
Prepare the remaining (“non-vegetable” or wet) ingredients in the bowl for the dressing. Toss with the vegetables and cool pasta and serve.
