A super simple gluten-free and dairy-free dip.
In a saucepan, caramelise onions and garlic in oil over medium heat—this takes about 10 minutes. The onions should be soft and golden but not crispy.
Add all the ingredients into a blender and blitz until smooth. If hummus is too thick, add more olive oil or water.
