That’s right, I said bacon! Just in time for fall, I would like to introduce you to my Apple Bacon Chicken recipe! It’s just as good as it sounds and still low in calories. It has a wonderful sweet and salty profile.
Preheat oven to 375ºF. Line a baking pan with foil and place a wire baking rack on top.
Put bacon slices on top of the wire rack and put in the oven to start baking.
In a large saute pan, add chicken and season with poultry seasoning. Cook over medium heat. When the liquid in the pan starts to dry up, add up to 1/3 cup of the apple cider to keep moisture in the pan.
Once bacon is nice and crispy, remove from oven. Once it has cooled a little, blot the grease with paper towels.
Once the chicken has reached 160ºF, remove from pan. Pour remaining cider into the pan while still over heat. Mix cider with the brown bits stuck to the bottom of the pan. Once there is nothing else stuck, add onions, apples and half of the bacon, chopped. Simmer for 5–7 minutes.
Add chicken back in and remove from heat. Let it sit in the sauce for a few more minutes, then serve.
