This spicy potato salad will leave you screamin’! Feed that inner rock star, yo!
Fill a large pot halfway with cold water and add potatoes. Cover and place on the stove, turning the heat up to high. Bring to a boil, and boil until potatoes are fork-tender, about 15 minutes. Drain potatoes, place in a large bowl, and allow to cool for about 5 minutes.
Add remaining ingredients and mix thoroughly. Cover with plastic wrap, and place in the refrigerator for at least 2 hours before serving.

Question: are cornichons sweet, dill, or sour in your neck of the woods? I’ve seen all 3 types where I live, and would think it’d make a big difference in this recipe. Thanks!
