Description

This easy Crockpot Pizza Quinoa tastes like the classic comfort food but is totally guilt, and gluten-free! It’s a healthy, kid-friendly, weeknight meal that will please the whole family!

Ingredients

  • 1-¼ cup Organic Pizza Sauce, Divided, Plus Additional For Serving
  • 1 cup Quinoa (See Note)
  • 1 cup Green Bell Pepper, Chopped
  • ⅓ cups Turkey Pepperonis, Halved
  • 1 teaspoon Italian Seasoning
  • ½ teaspoons Salt
  • Few Pinches Of Pepper
  • 1-¼ cup Reduced Sodium Chicken Broth
  • 8 ounces, weight Raw 93% Lean Ground Beef
  • ¾ cups (packed) Grated Mozzarella Cheese, Plus Additional For Garnish
  • ¼ cups (packed) Grated Parmesan Cheese

Preparation

Spray a 5-quart slow cooker with cooking spray and add 1 cup of the pizza sauce (saving the rest for later,) quinoa, green pepper, turkey pepperoni, Italian seasoning, salt, and pepper, and stir together.

Add chicken broth and stir. Finally, crumble up ground beef and stir it into the quinoa. Set to high heat and cook until liquid is absorbed, quinoa is tender, and beef is cooked, about 2–3 hours. (Mine only took 2.)

Add remaining 1/4 cup of pizza sauce and cheeses and stir. Cover and cook an additional 5 minutes, so the cheese can melt.

Divide quinoa between plates and drizzle with a little bit of extra pizza sauce and grated mozzarella cheese and devour.

Note: I made this a few times with the “uncolored” quinoa, and it was perfect! When I had to photograph it, I only had tri-colored quinoa on hand, and it just was not as good. So please use the “uncolored” quinoa in this recipe!
