Packed with fresh arugula, salty prosciutto, roasted almonds and tossed in a light olive oil dressing, this Arugula and Prosciutto Almond Salad is light, refreshing and full of nutrients!
In a large bowl, combine arugula, prosciutto, almonds, and cheese. Set aside.
To make the dressing, in a medium bowl, whisk together olive oil, lemon juice, garlic powder, and pepper. Pour over salad just before serving.
