A quick and different citrus-y coleslaw that even my menfolk love.
Dump cole slaw mix or cabbage into a large bowl. Peel and take membrane off oranges and cut them into bite-sized chunks. (I find these so much bettter than canned oranges.) Add these to cole slaw.
Mix the sugar and vinegar well before adding mayonnaise. Add a dash of salt. Pour over other ingredients and chill for at least 2 hours before serving. This tastes even better the next day. You can add or subtract sugar or vinegar, if you’re not satisfied with the taste. It makes a wonderful orange cole slaw that’s good any time of year.
