This salad is a great way to start the new year eating healthy. And it’s so tasty!
In a large bowl combine kale, spinach and field greens. Using a cutting board or a chopper, chop the mushrooms, carrots, radishes, Craisins and almond slices until they are all smaller and uniform in size. Dump them into the large bowl of greens and stir to combine. Mix in the salmon and serve your favorite dressing on the side or stir in to combine and evenly coat the salad ingredients. Makes 4 cups.
