So named by my husband because he couldn’t stop eating it, this easy and simple macaroni salad can be made “as is” or embellished to your heart’s content! Makes a lot, so it’s good for a crowd, or to enjoy as leftovers!
Cook macaroni according to package instructions. Hard boil eggs (see note). Chop up eggs and celery; add to macaroni. Mix dressing ingredients separately, then pour over everything and toss to coat.
Try to restrain yourself and not eat too much, OK? It’s a very simple recipe, but unbelievably good.
Note: To hard boil eggs, place the eggs in cold water and bring to a boil. Let boil for 5 minutes, turn off the heat and let the eggs sit for 15 minutes. Immerse in cold water until cool.

Southern macaroni salad (and even in IL) is ALWAYS sweeter than store bought. I can’t WAIT to try this one- and it seems perfect for a bonfire night at the pond (our plans tonight).

This really is simple and yummy! You can add a lot of different things to make it your own, but is a perfect basic recipe! We loved it!

Thanks so much for the comments about the sweetness. I thought that looked like a lot of sugar and I’m kind of funny about too much sweetness in savory type foods.

I agree with notacook, this is a very sweet macaroni salad recipe. I think the flavors are good here but they’re overwhelmed by the sugar. Next time I make this I’ll start by adding the sugar a teaspoon at a time until it reaches a more delicate balance.
