This is yet another recipe that came about when I was going through my fridge, cabinets and pantry searching for what I could fix to eat. The end result on this occasion turned out to become one of my best dishes ever. Do enjoy it!
Place the beans and corn in a large bowl. Add bell peppers and tomatoes.
In a separate bowl, whisk together the canola oil, olive oil, sugar and vinegar; pour over the bean mixture, stirring well. Chill well in the refrigerator prior to serving.
