A delicously light and summery pasta salad. Fresh and healthy.
Cook the pasta in salted water untill it’s just al dente. This takes about ten minutes. Cook the broad beans for the same amount of time, or if you’re using a can, heat them in a small pan.
Wash the lettuce leaves and slice them up. Put them in a large bowl or deep plate. Drain the pasta when it’s done and add to the lettuce. Add the beans and the olive oil. Stir it all together. Add the cream cheese and stir until it’s evenly mixed. Slice the onion and the salmon and add it all to the salad. Season with salt, pepper and a little lemon juice to give it some freshness.
