Yum, yum, yum! A great colourful dish to bring to a potluck, picnic or barbeque. Also great to pack in a lunch – it keeps well for several days.
1. Cook rice in vegetable or chicken stock in a covered pot.
2. In a large bowl, combine cooked rice, tomatoes, bell pepper, green onions and parsley.
3. Combine lemon juice, olive oil, salt and pepper and stir into rice/vegetable mixture.
4. Taste and adjust seasonings if needed: if it needs a flavor boost, add more salt or lemon juice; if it tastes too tangy, add more parsley or black pepper.
Refrigerate and serve cold. Enjoy!
