A warm lamb salad with a Greek flavour topped with a mango mayonnaise dressing.
Season the lamb with salt and pepper. Grill until a little pink is left.
Toasted the almonds in a 350ºF degree oven for 10-15 minutes.
Peel and pit the mangos. Cut into cubes. Finely chop the cilantro.
Add the mangos, mayonnaise and cilantro to a blender and blend until smooth. Add salt and pepper to taste.
Chop the lamb into strips and assemble the salad, olives, lamb, and feta cheese on a plate. Drizzle with the mango aioli. Serve immediately.
