Description

Perfect summer salad, loaded with nutrition and flavor!

Ingredients

  • 2 cups Cooked Quinoa
  • 3 cups Watermelon Balls Or Cubes
  • ¼ whole Red Onion, Thinly Sliced
  • 4 ounces, weight Feta Crumbles (i Use Fat Free)
  • 12 leaves Mint, Torn, Plus Extra For Garnish
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 Tablespoons Balsamic Vinegar

Preparation

In a serving dish, add quinoa, watermelon, red onion, feta and mint. Gently toss to combine. Drizzle in olive oil and balsamic vinegar. Toss to combine. Top with mint garnish. Serve chilled.

I made this last night for some friends and it got rave reviews all around! I made it as directed, except I left out the red onion (didn’t have any on hand, but I plan to include it next time) and I used a white mango balsamic instead of the traditional. Thanks so much for a great, light summer recipe!
