As weird as it sounds, this dish is perfect for a hot summer day.
Boil the pasta until al dente. Drain and set aside.
Chop up the herbs. Be sure to have lots of parsley and lovage; those two are the important flavours here. If you cannot get all these herbs, try Maggi Spice Mix No. 4 (although I don´t know whether it´s available outside of Germany). It has everything you need, although if you use it, adding some fresh parsley is still a good idea.
Cut the feta into little cubes. Don´t worry about them looking nice, they will crumble in the mixing process. The cubes are just there to facilitate the crumbling.
Now pour a generous helping of olive oil into a serving bowl. (N.B.: If you can buy something like Patros Feta, that comes in lots of oil and it’s always a good idea to use that oil.)
Add the chopped herbs and the pasta. Top off with the feta and mix thoroughly.
You will have to try some and adjust the seasoning to your liking.
Let it sit for a while for the pasta to absorb all the flavours. Then dig in!
