Spinach, smoked almonds, goat cheese, and a delicious dressing made from scratch!
Sauté shallot with 1 tablespoon olive oil. Add honey. Season with salt and pepper.
Transfer to a small bowl and whisk together vinegar, mustard, and rosemary. Add remaining olive oil and whisk again.
Combine the spinach/spring mix and parsley. Add dressing and toss to coat.
Crush almonds in a food processor, about 10 pulses.
Plate the spinach mixture on plates. Top with crushed almonds and goat cheese.
