This dressing is so easy and flavorful it will make you stop purchasing pre-bottled dressing. Makes enough for two large family style salads.
Peel and mince two large cloves garlic and set aside.
In a mixing bowl whisk the oil, vinegar, Dijon, salt and pepper together. Add the garlic and whisk again.
Let stand for 10 minutes before serving to allow the flavors to combine.
Serve with a green salad or as a dip for bread. Also works very well as a dressing for a cold pasta salad.

I make a dressing very like this, only I use lemon juice instead of vinegar…it is a very traditional French dressing. Yours looks good too, for some reason I love the clean tang of white vinegar.
