Description

A simple and flavorful summer pasta. Perfect for a hot night when you don’t want to cook for too long.

Ingredients

  • 1 bunch Asparagus
  • 1 whole Zucchini
  • 2 whole Summer Squash
  • 3 cloves Garlic
  • 1 pound Farfalle
  • 2 Tablespoons Butter
  • 2 pinches Salt
  • 2 pinches Freshly Ground Black Pepper
  • 3 Tablespoons Fresh Lemon Zest
  • 1-½ cup Whipping Cream
  • ½ cups Parmesan Cheese

Preparation

Cut the asparagus into bite size pieces, about 1 inch long. Cut the zucchini in half lengthwise and then cut into 3/4 inch half-circles. Do the same with the summer squash. Finely mince the garlic.

Get water for the pasta boiling and cook the pasta. Be sure to sprinkle the pasta water liberally with salt, it’s your best chance to season the pasta.

In a skillet, melt the butter over medium-high heat. Then add the garlic and other veggies along with a couple of pinches each of salt and freshly ground black pepper.

Cook them for about five minutes or until the veggies just start to cook through. Remove the veggies from the pan using a slotted spoon and set aside.

Leave the melted butter/liquid rendered out of the veggies in the pan. Add the lemon zest, cream and cheese to the pan and heat over medium heat to a boil. Stirring frequently, allow it to boil for about 3 minutes or until it’s reduced by about 40%.

Pasta should be done now. Drain the pasta. Add the veggies and sauce into the pasta, sprinkle with some more Parmesan and serve!

This was fantastic. I had two people over for dinner and it received rave reviews from all 3 of us. I don’t have a zester so used fresh lemon juice. I’ll make it again when I get a zester as I’m curious as to the difference as I think the lemon zest would provide far more flavor.

Was such a great and easy dish for a warm summer night.

Very yummy! My husband said, “Babe, definitely top 5!!!” I’m thinking pine nuts might be a nice addition, and I might 1.5 the sauce next time – but I tend to like more sauce than the average girl! Anyway, I’ll be making this again for sure!

This is a wonderful recipe and will surely become part of the standard repertoire in my kitchen! I added shrimp to this recipe and it was a very nice addition- I just added the raw shrimp to the veggies towards the end of their cooking time.

I may try making this with half and half next time instead of heavy cream to see if I can cut a little bit of the fat.

I really enjoy this recipe and have made it a few times. It is so easy and quick and I usually have the ingredients around. I usually add some extra lemon zest and cheese because the flavor can be a little too subtle for me otherwise. The last time I made this I did a quick roux before adding the cream and was happy with the thicker sauce. In any case, it is an awesome recipe that is becoming a staple go to meal.
