Garlic and rosemary roasted pork, smothered with white beans and tomatoes.
1. Preheat oven to 325 degrees F. Coat a roasting pan with cooking spray or line with foil and spray.
2. Chop two of the garlic cloves and mix with the rosemary, salt and pepper.
3. Rub pork with 2 tablespoons of olive oil and season with the garlic/rosemary mix.
4. Place pork in roasting pan, pour wine around the pork and roast in 325 degree F oven for 1-1 1/2 hours.
5. Slice remaining two cloves of garlic and saute in 1 tablespoon of olive oil with the sage leaves until garlic is softened. Stir in beans and tomatoes. Bring to a boil and then lower heat and keep warm until pork reaches the 1 hour point.
5. Pour bean and tomato mixture around pork and roast for an additional 20 minutes or until meat is tender and juices run clear.
