That’s the Best Frosting I’ve Ever Had

I’ve been intrigued with this frosting recipe for months, not just because of its alluring title, but also because if its ingredients. Five tablespoons of flour? In frosting? Let’s just say my interest was piqued.

I finally got around to making it yesterday evening; Marlboro Man’s grandmother has some old friends staying at The Lodge and I wanted to take them a treat. So I whipped up this frosting, slapped it on some chocolate cupcakes…and wound up considering not sharing them with the guests because it was so delicious.

You owe it to yourself to make this frosting sometime in your life.

You’ll just have to trust me on this.

Here’s how you make it:

First things first: I made chocolate sheet cake cupcakes. They’re the best cupcakes around.

Here’s the recipe:

Let your cupcakes (or cake) cool completely.

Begin by pouring 5 tablespoons of flour into 1 cup of milk. I used whole milk because I can if I want.

After adding the flour, whisk it together until combined, then place the saucepan over medium heat. Whisk it as it heats up and thickens, and stop when the mixture is very thick.

Cool the mixture completely.

The mixture will be very, very thick.

Add 1 teaspoon of vanilla to the cooled flour/milk mixture.

Stir it around to combine.

Pour one cup of sugar into a bowl with one cup of butter.

Whip it around until it’s light and fluffy, scraping the bowl once or twice to make sure it’s all mixed well.

Add the cooled flour/milk/vanilla mixture. Make sure it’s not the least bit warm!

Next, just whip it on medium-high until the mixture resembled whipped cream.

This was slightly tricky for me, as I was afraid of overbeating the mixture and causing everything to start breaking down and falling apart. I’d say this is about 45 seconds of pretty hard beating.

And then it was time for the rubber to meet the road.

This was spread with a dinner knife. The frosting definitely has a whipped cream consistency; it’s not thick like a decorator icing.

THE VERDICT: Okay. Let me just explain something to you. After I took this bite, I looked around for the hidden camera. I was certain someone was playing a trick on me. This frosting is so UNBELIEVABLY divine, I almost couldn’t believe what was happening to me. The consistency is light, the flavor indescribably delicious, and a perfect complement to the rich chocolate cake. And don’t just take my word for it—after my daughter took her first bite, she looked at me and said “WHAT is this FROSTING?”

Even she knew she was in the presence of greatness.

‘Tis the season for giving (not that there’s any wrong season for giving) and I don’t know about you, but I just love receiving thoughtful, special gifts made by hands that belong to those who are near and dear to me. I also love sharing goodies from my kitchen and I do feel there are few things as satisfying as bringing someone joy in the belly. So whether you’re looking for ideas for gift baskets, hostess gifts, or even just little giveaways to your guests, here’s a roundup of some great ideas to spread that joy.

You can always, of course, make your favorite batch of cookies. You can’t go wrong with cookies. If you’re worried about keeping them fresh and moist, one trick is to store your cookies in an airtight container with a slice of bread. The bread helps keep the cookies nice and fresh longer. Or you can opt for biscotti, wrapped up in pretty little bags or boxes.

We’ve also had quite a few Tasty Kitchen blog posts with step-by-step photos for recipes that would make wonderful gift items. You can also use pretty mason jars or cute bottles to hold homemade sauces and syrups. Give them something they won’t find in any store and it’ll be even that much more special to them.

You can also give your friends homemade mixes of different kinds, like your favorite hot cocoa mix or other drink mixes like Chai or Green Tea. You can even give them your favorite homemade pancake mix, leaving out the wet ingredients and printing pretty little instruction cards for them. Think of all the possibilities!

If you have the opportunity to present your gift the same day you make it, a tray of freshly-baked Brownies and Bars will definitely bring a smile to someone’s face.

 
Of course, a popular and always well-received gift is candy. Candy always looks festive and sometimes can almost look too pretty to eat. Almost.

The Mushroom Soup!

This is the day of the week when we select a lesser-known Tasty Kitchen recipe—one that might otherwise go unnoticed—and cook it up. My friend and fellow food lover Erika (you might know her as TK Erika) spends a lot of time looking at every recipe that comes through Tasty Kitchen’s doors and sent me a link to this particular mushroom soup recipe a couple of weeks ago. I took one look at the ingredients and knew right away I had to try it.

Here’s the bottom line: I love mushrooms. Love them with every ounce of my being.

Begin by chopping carrots and celery. It’s a good start for most anything.

Heat olive oil in a pot, then throw the two veggies right in. Stir them around and cook them for a few minutes.

While the carrots and celery are cooking and softening, slice up the mushrooms.

Throw the mushrooms into the pot.

Stir them around and cook them for several minutes.

After awhile, the mushrooms will reduce and the liquid will start to cook off a bit.

At that point, pour in white wine. The recipe called for Chablis, but I used Chardonnay since that’s what I had in the fridge.

Let this mixture cook down for a few minutes.

Next, add tomato juice…

And chicken broth.

Then stir and allow mixture to boil for five minutes. The liquid will reduce and the color will deepen.

And ooooh, does it ever smell good.

Can I just reiterate for a second how much I love mushrooms?

Next, pour in the cream. NOTE: I used half-and-half instead of cream, because…well…I had no cream in my fridge, because…well…I’d used it all for my Cajun Chicken Pasta Sunday evening and didn’t feel like driving to town to the grocery store.

It has to be a pretty serious reason before I’ll drive to the grocery store. Diet Dr. Pepper, for instance. Tums when I’m pregnant. Carmex when Marlboro Man’s out. Chocolate when I’m desperate. Things like that.

Stir in the cream, then bring it to a soft boil.

Next, grate up some Parmesan cheese.

Add it to the pot. Stir it to combine and cook gently for a few more minutes, adding salt as needed. At this point, the recipe calls for adding a small amount of cornstarch/water mixture (see recipe) but I decided to leave it out since, even with half-and-half, the soup at this point was plenty thick. I think you could have the cornstarch mixture ready; that way, if the soup seems overly thin, you can add it.

The Verdict: This soup was absolutely delicious. If you love mushrooms, you’ll be in Heaven–it’s absolutely chock full of them. The small amount of tomato juice gives the soup the most delicate tangy undertone, and the Parmesan injects a whole lot of flavor. I think using cream as the recipe states would be extra delicious, but honestly, it was perfectly good with half-and-half. Also note that depending on the appetites of those eating, this recipe makes 2 to 4 servings. If you’re cooking for four really hungry people, you might want to double the recipe. Leftovers are never a bad thing!

Everyone’s talking about the approaching “bathing suit” season, and it’s hard to escape it. Someone we know is in Orlando this week, where tank tops and shorts abound. For some of us (and by ‘us’ I mean ‘me’), we’re thinking now is a good time to say goodbye to some winter pounds and start preparing for summer.

Looking good in a bathing suit isn’t the only reason to start eating healthy. More importantly, being healthy on the inside makes us feel good and gives us more energy. And what better way to start than with a healthy breakfast. After all, everyone seems to be in agreement that breakfast is the most important meal of the day. Unfortunately, it’s also the most neglected or skipped meal of the day. But having a balanced breakfast helps you perform better at work, home or in school. It helps fight distraction because it makes you feel more alert.

Having a healthy breakfast doesn’t mean oatmeal everyday, although if you follow this link and look at eastcolomom’s Baked Apple & Peanut Butter Steel Cut Oats, oatmeal everyday might strike you as a great idea. You can also pour yourself a bowl of healthy cereal and top that with some fruit. Or you can take an extra minute or two and assemble a lovely parfait of yogurt, granola, and berries as a nice morning treat, like mybakingaddiction’s presentation of Homemade Granola below. You can even change it up by trying different flavors of granola to add a little variation. We’ve got a few ideas below, like Great Granola with Cherries and Almonds from ThreeManyCooks. Eating raw, vegan or gluten-free doesn’t mean you can’t enjoy granola too, as elanaspantry shows us in her Raw Vegan Gluten Free Granola on the bottom right.

Sometimes, it just feels like a pancake kind of morning. Or at least maybe toast and something sweet to spread on it. We’ve got healthy options for that, too! From whole wheat pancakes with flax meal and a dairy-free French toast that uses coconut milk instead of milk and butter, you can enjoy a healthy breakfast that almost feels like you’re cheating.

There’s no question that even serial breakfast-skippers (serial … cereal … oh, puns are already swimming in my head!) might change their ways if only someone would take the time to get breakfast ready for them. The main reason for this widespread breakfast brushoff is time. Often, we’re just too rushed and too pressed for time. If it’s that kind of morning for you, how about parking your blender on the counter and keeping containers of cut up fruit and vegetables in the refrigerator so you can throw together a quick smoothie?
