We’ve got raspberries coming out of our ears around here! So far, we have mostly picked them right off the bush and eaten them then and there, barely collecting enough in a bowl to take inside and use in any recipe. But today, I have resolved to accumulate enough to make a raspberry treat. This Lemon & Raspberry Summer Cake from TK member Lauren looks like the perfect thing. Soft and lemony, with a luscious creamy frosting, those fresh raspberries piled on top will finish it off nicely. I can’t wait to taste … and share!

(No, Sommer, I did not know asparagus can grow up to a foot in a single day. That’s crazy!)

I love a good creamy risotto but sometimes I can do without an extra pat or three of butter or a fistful of cheese. This Light Butternut Squash Risotto gets much of its lusciousness from pureed roasted squash. TK member Claire adapted this recipe from Williams Sonoma but her version is lighter without sacrificing flavor.

Well. I remember just about falling off my chair when I first saw this Limoncello and Ricotta Cake from TK member Melanie. It’s like tiramisu except, instead of espresso, you use summery Limoncello.

I’ve seen a few versions of Limoncello tiramisu floating around online, but this one uses ricotta instead of mascarpone. I don’t know about you but I find ricotta so much easier to find than mascarpone. It’s a lot easier on the wallet, too. This cake looks so moist and lemony and I can imagine how creamy it is in the middle with the ricotta and lemon curd. Genius!
