We’re about a month into our summer grilling, with no intention of slowing down. Kebabs, burgers, ribs, sausages … Even when we fry fish, we put the grill’s handy side burner to work. The trees in the backyard don’t seem to mind the aroma as much, which keeps the couch and carpet and every porous surface in my house happy.

We always try to include roasted or grilled veggies whenever possible, but sometimes, we just want something simple and fresh to go with all that beautifully cooked meat. I can’t wait to try this Greek Salad from TK member Julie this weekend. The salad itself is unabashedly simple: just lettuce, cucumber, bell pepper, tomatoes, olives, and feta cheese. But her promise of delivering the best Feta Vinaigrette is what caught my eye. I think I might even make a little extra vinaigrette (minus the feta) and use that to quickly marinate chicken before throwing it on the grill. Maybe heat a few pitas on the grill for the boys who balk at the idea of a low-carb meal, and everyone’s happy.

All summer long, I’ve been dreaming about this Grilled Portabella and Brie Burger posted by TK member Aggie’s Kitchen. It’s so easy and simple, but I can already imagine the flavor explosion you get when you first bite into it. The balsamic and olive oil-marinated mushroom caps, the layers of grilled vegetables (I like mine with extra char), and then—the pièce de résistance—brie spread on the warm top bun. With fresh basil leaves tucked in there as well.

Oh my goodness, how delicious does that sound? I know summer is all packed up and ready to leave us, but I say we detain it a little longer with this sandwich.

Just about everyone loves fish and chips. The crispy, but tender-on-the-inside fish and the fries dipped in tartar sauce. Who’s with me? It’s not in our regular dinner rotation around here, because of the frying, but it’s too good not to make once in a while.

I can’t think of anything more satisfying and perfect for St. Patrick’s Day than fish and chips made with Guinness. This recipe for Guinness-Beer Battered Cod and Chips from TK member Melanie is looking pretty delicious and is going on our St. Paddy menu this year. The Guinness is perfect in the batter for the cod. It’s also a great fish recipe, if you’re observing Lent!

Now let’s go buy our Guinness before it sells out!
