I like to make a salad on top of a salad: I chop avocado, cucumber, grape tomatoes, garlic, cilantro, and toss with fresh lime juice, olive oil, salt and pepper and scoop it onto chopped iceberg and romaine lettuce. If I’m wanting to add protein, I top with some feta cheese crumbles or canned chicken. I’m allergic to onions, so I leave them out. For my husband’s salad, I add some chopped purple onion to his avocado mixture. So very good!

I love to make a lemon orzo pasta salad with feta and some lemon chicken. It a sunny dish like the weather and always makes me think of summer.
