Lately it’s simply been spiralized green/yellow squash sauteed with homemade pesto and some protein. Pan seared or grilled shrimp is awesome, especially when tosed in the pesto, too!

In the summer I love BLTs, the perfect tomato, crispy bacon and cold crisp lettuce. I love to add a slice of hot pepper cheese to spice it up a bit and some chipotle mayo to finish it off.
