I love grilled chicken breasts on a bed of spinach leaves with dried cranberries, toasted pecans, fresh mozzarella with homemade honey mustard dressing. Fresh fruit on the side with some crusty bread is always a winner at our house.

A light pizza on the grill is a great summer dish. I keep extra dough in the freezer, set it out in the morning and it is ready to be rolled out when I get home from work.

We do not have air conditioning so we try to cook everything on the grill, I have even baked cornbread in an iron skillet on the grill. It turns out great.
