We have been loving BADS (Big Ass Dinner Salads). We put out a whole bunch of toppings (chicken, bacon, wonton strips, croutons, cucumbers, tomatoes, cheeses, etc) and we put on what we want. The kids love it, the hubs and I love it, there’s not a whole lot of cooking involved, it’s healthy (mostly) and filling.

We smoke up a bunch of chicken & turkey, then freeze in meal size portions. That way we can make awesome salads with all the goodies and have prepared meat to add over the top. Easy peasy summertime meals.

Fresh vegetables — whatever’s in the crisper drawer or on the counter, sauteed in a little olive oil, tossed with some sort of pasta, and sprinkled with grated parm. Will sometimes add in left-over chicken.

I like to cook pasta on the stove top. Set it aside and make a white sauce adding cooked chicken or tuna. Saute chopped fresh spinach or add frozen peas…mix it all together and sprinkle in some freshly grated parmesan cheese…. It keeps the kitchen cool and fills everyone’s belly.
