Delicious salad with nuts, strawberries, bell peppers, red onion, baby spinach and the creamiest homemade poppy seed dressing.
Step 1: Toast the pine nuts or cashews in a dry frying pan over medium heat for roughly 5 minutes. Remove from heat.
Step 2: To make the dressing, whisk together the mayo and maple syrup. Whisk in the garlic, poppy seeds and Dijon mustard.
Step 3: To make the salad, in a large bowl mix together the spring mix lettuces, baby spinach and slivered basil. Add the red onion slices, bell pepper and sliced strawberries. Add the cooled pine or cashew nuts.
Serve topped with poppy seed dressing.

What a delicious spinach salad! That dressing was so creamy and delicious. I made it with only spinach since I had no lettuce. I chose to save my one pepper for another dish. I only had sunflower seeds so I used them. This will be one of my favorite recies of all time and I thank you for sharing it here with us!
