Description

Chicken breasts marinated in fresh cilantro, garlic and lemon … grilled to perfection!

Ingredients

  • 1 cup Fresh Cilantro Leaves And Stems, Chopped
  • 4 cloves Garlic
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper
  • 1 whole Lemon, Zest And Juice
  • ½ cups Olive Oil Or Vegetable Oil
  • 4 whole Bone-in Chicken Breasts

Preparation

Step 1: In a food processor, add the cilantro leaves and stems and garlic cloves. Pulse until chopped. Season with salt and pepper, adding in the lemon zest and juice. With the machine running, add the oil.

Step 2: In a large resealable bag, add the chicken breasts along with the marinade. Coat the chicken, place on a plate in the fridge and marinate for at least 4 hours. The longer this chicken marinates, the better.

Step 3: Take the chicken out of the fridge, let sit at room temperature for 10 minutes before grilling.

Step 4: Grill the chicken, bone-side down first, flipping as needed.

We ate this grilled chicken on salad last night. Talk about a hit! Even my “I wish salad was bad for you” child cleaned his plate!

I typically hate cilantro but this sounds really yummy, might be worth giving cilantro another chance :p

I made this a few weeks ago and my husband has been begging for it every couple of days!! I even chopped up some of the leftovers and put them onto a tostada with some fresh made salsa and sour cream and it was divine! Thank you!
