Description

You will never believe that these quick and easy, one-pot Vegan Sloppy Joes use cauliflower instead of meat! They’re a healthy, gluten-free, crowd-pleasing dinner that’s ready in under 30 minutes and under 300 calories!

Ingredients

  • 2 teaspoons Olive Oil
  • 2 teaspoons Garlic, Minced
  • ½ leaves Green Pepper, Diced
  • ¼  Onion, Diced
  • 1 pound Cauliflower Diced Into Small Pieces (Similar To The Texture Of Ground Meat)
  • ¾ cups Tomato Sauce
  • ½ cups Reduced Sodium Vegetable Broth
  • 1-½ Tablespoon Tomato Paste
  • 5 teaspoons Coconut Sugar
  • 1 Tablespoon Gluten Free Worcestershire Sauce (Vegan Version Such As Annie's Homegrown For Vegan Option)
  • 1 teaspoon Red Wine Vinegar
  • 1 teaspoon Chile Powder
  • ¾ teaspoons Salt
  • ½ teaspoons Yellow Mustard
  • ¼ teaspoons Red Pepper Flakes (omit If You Don't Like Spice)
  • Generous Pinch Of Pepper
  • 4 Gluten Free Buns
  • Parsley, For Garnish (optional)

Preparation

Heat olive oil in a large pan on medium-high heat.

Add garlic, pepper and onion and cook until just lightly golden brown, about 2–3 minutes. Add cauliflower and cook, stirring frequently, for 2 minutes.

Add all remaining ingredients, except parsley and buns, and stir together. Make sure the really break the tomato paste down into the sauce.

Turn the heat up to high and bring to a rapid boil. Then reduce heat to medium and simmer, stirring occasionally, until liquid evaporates and mixture is thickened (but still moist and saucy!). This takes about 10 minutes.

Divide the mixture between the buns and garnish with parsley and onion (if desired.) Devour.
