Description

A quick and easy salad with a versatile dressing. Delicious!

Ingredients

  • FOR THE BEAN SALAD:
  • 1 pound Green Beans, Washed, Ends Trimmed
  • ½ cups Pecans, Toasted
  • _____
  • FOR THE DRESSING:
  • 2 Tablespoons Canola Oil
  • 4 Tablespoons White Wine Vinegar
  • 1-½ Tablespoon Dijon Mustard
  • Salt And Pepper, to taste
  • ½ whole Lemon, Juiced

Preparation

Put green beans and pecans in a bowl. In a separate bowl, whisk together the dressing ingredients. Taste along the way to be sure the seasonings are to your liking.

Pour dressing on top of beans and mix together. Serve, or keep in the refrigerator until ready to eat.

I lightly steamed the green beans and blanched them quickly in ice water. Are the beans supposed to be raw? The recipe doesn’t say to cook them but I’ve read raw green beans can be poisonous.
