Description

A quick and elegant meal for sultry summer nights!

Ingredients

  • FOR THE AVOCADO DRESSING:
  • 1 whole Ripe Avocado
  • ¼ cups Plain Greek Yogurt
  • ½ whole Lemon, Juiced
  • ½ cups Water
  • ½ teaspoons Salt
  • 2 Tablespoons Chopped Chive
  • FOR THE TROUT SALAD:
  • 5 ounces, weight Spring Salad Greens
  • 1 bunch Radished, Stems Removed And Sliced Thin
  • 1 whole Ripe Peaches, Pitted And Sliced Thin
  • 12 ounces, weight Smoked Trout, Broken Into Pieces

Preparation

Place all the ingredients for the avocado dressing in the food processor (or blender). Puree until smooth.

Using a large spoon, pool the dressing on 4-6 salad plates, or streak across the plates like at a restaurant.

Arrange the greens on the plates, followed by radishes, peach slices and smoked trout chunks.

This is a wonderful salad! I added a little garlic to the dressing before blending but other than that we followed it exactly as written. I could eat the dressing with a spoon and be happy :) The peach and radish are great flavors against the smoky fish and fresh dressing.
