I made this tonight and it was a hit with the family. Even my son who claims he doesn’t like sweet potatoes loved it. I can’t wait to make it for a side at Thanksgiving.

This was so good! We ate it while the sweet potatoes were still a little warm and it was great. I thought the jalapeno in the dressing would make it a little too spicy, but it didn’t at all (although I made sure I had all the seeds out of it!). Will definitely make it again.

Although I love the concept of this salad, I thought the dressing was a bit bland. In fact, none of the flavors of the ingredients really shines. Next time, I think I’ll use lots more lime and jalapeno to try to give it more of a kick. Lots of salting also helped. Overall, this was a great side (and creative, I thought!), but it needs some tweaking.

Have made this several times– for us, for church, for my vegetarian sister–and it goes over well every time!

We ate it with a fork, but you can eat it however you want!

Can’t wait to try this recipe. I have come to love the combination of black beans and sweet potatoes. I need to post a recipe for sweet potato and black bean enchiladas for ya’ll.
