A terrific quinoa salad that gets a boost from a bright citrus and curry dressing.
Combine quinoa, green onions, apple, celery, red pepper, golden raisins and almonds in a large bowl. Add ½ cup of dressing and mix until combined. Serve immediately.
For the dressing, combine juice, extra-virgin olive oil, maple syrup, cinnamon, curry powder and kosher salt in a jar with a lid; shake well. Note: You will only use ½ cup dressing for this recipe; reserve the remainder for another use.
