Description

This delicious salad consists of toasty bread, feta cheese, a tasty vinaigrette, and a variety of your favorite vegetables.

Ingredients

  • FOR THE SALAD:
  • 1 teaspoon Olive Oil, For Toasting Bread
  • 1 whole Small Loaf Of Bread, Cut Into Bite Size Pieces. Gluten Free Or Regular
  • ½ whole Red Onion, Cut Into Bite Size Pieces
  • 1 whole Medium Red Pepper, Stem And Seeds Removed, Cut Into Bite Size Pieces
  • ¼ cups Kalamata Olives, Cut In Half
  • 1 whole Medium Cucumber, Cut In Half, Scrape Out The Seeds And Then Cut Into Bite Size Pieces
  • 1 pound Cherry Tomatoes, Cut In Half
  • 4 ounces, weight Feta Cheese, Crumbled
  • FOR THE VINAIGRETTE:
  • ½ cups Olive Oil
  • ½ teaspoons Dijon Mustard
  • ½ teaspoons Minced Garlic
  • ½ teaspoons Dried Oregano
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

1. Combine all of the vinaigrette ingredients (olive oil, Dijon mustard, minced garlic, dried oregano, salt, and pepper) in a small bowl and whisk together until combined. Set aside.

2. Heat a large pan on medium heat and add olive oil and bread cubes. Toast bread for about 10 minutes, or until bread is crispy on the outside.

3. Add all of the diced vegetables, bread cubes, and the feta cheese into a large bowl. Slowly add the vinaigrette and mix until everything is combined. You may not need all the vinaigrette, so add slowly until you have desired amount.

4. Enjoy!

I totally agree that this is a wonderful salad. I had never had this one until about three years ago in a cooking class taught by a popular local chef. It rocks.

This is one of my favorite recipes. So many variations and so many possibilities. It’s delicious eaten outside on a beautiful clear day.

Everyone should have this recipe on hand. I never cared for croutons until I made this for the first time. The dressing and juice from the fresh tomatoes (in the summer) seep into the bread and add to the flavor of the dish. This is all I need for dinner and my husband really likes it too. If we have other vegetables we wish to add, we do.
