Mustard ‘N’ Relish Potato Salad
Description
Yellow mustard and sweet pickle relish is my favorite condiment combination, so I tweaked my potato salad recipe to suit it. This is a hit when I bring it places, and my family loves it, too!
Ingredients
- 2 pounds Russet Potatoes (about 6 Medium), Peeled, Cubed, And Cooked
- 2 stalks Celery Finely Chopped
- ½ cups Yellow Onion, Finely Chopped
- ⅓ cups Sweet Pickle Relish
- 4 whole Hard Cooked Eggs, Chopped
- 1-½ cup Real Mayonnaise (Such As Hellman's Or Best Foods)
- 2 Tablespoons Yellow Mustard
- 1 Tablespoon White Vinegar
- 1 teaspoon Salt
- ¼ teaspoons Pepper
Preparation
Mix mayonaise, mustard, vinegar, salt and pepper in a large bowl. Add potatoes, celery, onion, and relish; toss. Stir in chopped, hard cooked eggs. Cover and refrigerate for a minimum of four hours, so flavors can blend.
