Lime Poppy Seed Dressing

Description
This is a light and refreshing dressing. Simple and quick to make.
Ingredients
- ⅓ cups Fresh Lime Juice
- 3 Tablespoons Vegetable Oil
- 3 Tablespoons Honey
- 1 teaspoon Dijon Mustard
- ½ teaspoons Poppy Seeds
- 1 head Red Leaf Lettuce
- 1 whole Small Red Onion, Sliced
- Homemade Croutons
Preparation
In a small bowl add the lime juice, oil, honey, mustard, and poppy seeds, Whisk together until completely mixed. Set aside. Tear red leaf lettuce into bite-sized pieces and place into a large bowl. Add sliced red onions (as many or as little as you like) and some homemade croutons, toss to mix. Add dressing and toss again to coat. Dressing will wilt lettuce after about 2 hours, so add dressing just before serving. Dressing can be made ahead of time and refrigerated.
