Description

I’ve had this recipe forever but hadn’t made it in years. I made it recently and had forgotten how very good it is. Serve it over your favorite greens. We prefer it on a spinach salad.

Ingredients

  • 4 slices Bacon
  • ½ cups Sugar
  • ¼ teaspoons Salt (optional)
  • 1 Tablespoon Cornstarch
  • 1 whole Egg, Beaten
  • ¼ cups Vinegar
  • 1 cup Water
  • Fresh Spinach Leaves, Dandelion Greens, Or Endive; Washed Drained And Chilled

Preparation

Fry bacon until crisp. Remove bacon strips to drain on paper towels; reserve bacon drippings.

In a small saucepan over medium to medium-low heat, combine sugar, salt and cornstarch.

Add beaten egg and vinegar; mix well.

Add water, crumbled bacon and reserved bacon drippings. Cook to desired thickness. (Extra sugar or vinegar may be added to taste).

Serve over greens. Makes 1-1/2 cups dressing.

I have a question. Is this the same Amish style hot bacon dressing? I was recently in Lancaster PA and had this dressing and it was incredible!
