Description

A simple spinach salad full of strawberries, apples, nuts and goat cheese and smothered in a homemade tangy Champagne vinaigrette!

Ingredients

  • FOR THE DRESSING:
  • ¼ cups Olive Oil
  • 2 Tablespoons Champagne Vinegar
  • 1 clove Garlic, Minced
  • ½ teaspoons Dijon Mustard
  • ¼ teaspoons Salt
  • 1 pinch Black Pepper
  • FOR THE SALAD:
  • 1 bag (10 Oz. Size) Baby Spinach
  • 1 whole Apple, Cored And Chopped (I Used A Gala)
  • 1 log (4 Oz. Size) Honey Goat Cheese
  • 1 cup Walnuts
  • 1 pint Strawberries, Hulled And Sliced

Preparation

For the Champagne vinaigrette:
Place olive oil, Champagne vinegar, garlic, Dijon mustard, salt and pepper into a bowl and whisk until well combined.

For the salad:
Place spinach into your bowls and top as desired with chopped apples, sliced strawberries, walnut pieces and goat cheese. Top with dressing.

Notes: I’d say the dressing makes enough for two, but the recipe is easily doubled. Other than that, just eyeball the salad ingredients to suit your needs!
