Description

Hobbes’ Favorite Tuna Salad

Ingredients

  • 2 cans (5 Oz Cans) Solid White Albacore Tuna, Packed In Water
  • 2 Tablespoons Grated Onion (great Way To Hide Onion From Kids)
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Fresh Lemon Juice
  • ¼ cups Hellmann's Mayonnaise
  • 2 pinches Salt
  • 2 pinches Pepper
  • 4 slices Sandwich Bread
  • 2 leaves Lettuce

Preparation

Open two cans of tuna and drain off the water completely. Transfer tuna into a medium size bowl and pat dry with a few sheets of paper towels.

In a small microwave safe bowl, combine grated onion and olive oil and heat for 45 seconds. Remove the bowl from the microwave and allow them to cool slightly.

Using a fork, toss onion mixture with tuna and add lemon juice and mayo. Add any optional ingredients (see note*) if using. Season well with salt and pepper.

Assemble the sandwiches by putting a leaf of lettuce on two slices of bread and topping the lettuce with tuna salad, then add a top slice of bread. Or put it on top of a bed of greens.

* Optional tuna salad ingredients: finely chopped celery, chopped hard boiled eggs, fresh dill, or anything else that catches your fancy.
