Glad this was featured – wasn’t sure what to have for dinner, then this. I had everything on hand (except for the yogurt, subbed mayo)and….it was a hit. My husband didn’t even add his usual Tabasco (I swear it goes on everything but his cereal). So easy to put together and a nice blend of flavors. Thank you for a great mid-week addition to the rotation!

I made this for dinner tonight since I had the ingredients on hand. YUM! I did forget to throw in the cotija, but it was still delicious without. A very nice light and healthy dinner. It was nice and creamy.
