Description

A really delicious chicken salad recipe that tastes just like the famous Willow Tree Chicken Salad recipe!

Ingredients

  • 1 pound Cooked Boneless, Skinless Chicken Breasts
  • ¾ cups Mayonnaise
  • 3 Tablespoons Finely Minced Celery
  • 3 Tablespoons Finely Minced Onion
  • 1 Tablespoon Brown Sugar
  • ⅛ teaspoons Garlic Powder
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation

Put the chicken breasts in a mixing bowl. Using a stand mixer with paddle attachment, blend chicken breasts until thoroughly shredded. Or you can shred by hand. (Note: Shredded chicken rather than diced chicken pieces will help recreate the original Willow Tree chicken salad texture.)

Remove the bowl from the mixer and add in all the other ingredients. Stir by hand to mix well.

Serve over lettuce leaves or in a sandwich.

This was such an easy recipe to follow and so tasty! I love Willow Tree chicken salad but find it expensive, and as much mayo as chicken. Love making it myself! The only thing I did differently here was that I used half creme fraiche and half mayo to give it a bit more lightness.
