Description

You won’t believe how much goodness this salad has, not to mention how delicious it is!

Ingredients

  • 1 can (410g Size) Chickpeas
  • ½  Cucumber, Chopped Small
  • ½  Red Onion, Finely Chopped
  • ⅓ cups Mint Leaves, Chopped
  • ⅓ cups Parsley, Chopped
  • 2 ounces, weight Feta Cheese, Crumbled Or Cubed

Preparation

Drain and rinse the chickpeas. In a large mixing bowl, toss together all ingredients. Spoon into a salad bowl and serve.

Notes: I like this salad with a very simple dressing of olive oil, balsamic vinegar, salt and pepper. Nuts are a nice addition—almonds, pecans or pistachios work really well!
