Description

Sweet and spicy black bean salad with papaya sauce is delicious. By adding black salt and roasted cumin powder I gave it an Indian touch.

Ingredients

  • ½ whole Ripe Papaya (seeds And Peel Removed)
  • ½ Tablespoons Dried Basil
  • ½ teaspoons Salt
  • ¼ teaspoons Black Salt
  • ½ teaspoons Cumin
  • ¾ teaspoons Crushed Black Pepper
  • ½ whole Red Onions, Chopped
  • 1 can Black Beans (15 Oz. Can), Drained And Rinsed
  • ¼ cups Chopped Cilantro
  • ½ cups Chopped Avocado
  • ½ Tablespoons Plus 1/2 Teaspoon Lemon Juice

Preparation

Combine papaya, basil, salt, black salt, cumin powder and black pepper in a food processor and puree it for approximately 2-3 minutes or until smooth. Keep the sauce aside and let it blend in its own flavor.

In the meantime, combine onion, black beans and cilantro in a mixing bowl. Add the papaya sauce to the salad and mix well so that the salad is properly coated with the sauce. Toss in the avocado and lemon juice. Serve immediately.
