Description

A slightly sweet grain salad with a pesto dressing.

Ingredients

  • 3 cups Cooked Barley
  • 3-½ cups Kale Leaves, Sliced Into Ribbons
  • 1 cup Cherries, Pitted And Halved
  • 2 Tablespoons Fresh Basil, Torn
  • ½ whole Lemon, Juiced
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 clove Garlic (small)
  • 1 teaspoon Honey
  • 1 pinch Salt And Pepper
  • ½ cups Walnuts, Toasted

Preparation

Combine barley, kale and cherries in a large bowl. Set aside.

Combine remaining ingredients except walnuts in a food processor and process until it reaches a dressing-like consistency (about 30 seconds). Pour dressing over salad and season with salt and pepper to taste. Top with toasted walnuts.

Serve room temperature or chilled.

This is serendipity – all I have to do is run over to the Farmer’s Mkt across the street on my lunch, buy kale and cherries and I’m in! Sounds like it would be great with something grilled this weekend.

Wonderful recipe! I made a couple substitutes based on what I had on hand – changed the Barley for Quinoa and Fresh Cherries for Dried Cranberries. Definitely one of my new favorite summer salads!

Having never used barley before, I was quite pleased with myself and with this salad. Easy prep, good flavor meld, and you hardly notice it’s “healthy”. Slipped that right in there….
