Description

Crisp green salad with sweet fall apples, crunchy pecans and salty feta drizzled with homemade balsamic dressing.

Ingredients

  • FOR THE SALAD:
  • 2 cups Mixed Lettuce Greens
  • 1 whole Apple, Cored And Chopped
  • ½ cups Crumbled Feta Cheese
  • ½ cups Pecans, Roughly Chopped
  • 4 slices Red Onion, Thinly Sliced (optional)
  • FOR THE HOMEMADE BALSAMIC DRESSING:
  • ½ cups Extra Virgin Olive Oil
  • ½ cups Balsamic Vinegar
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Brown Sugar
  • 1 clove Garlic, Minced
  • ¼ teaspoons Salt
  • ½ teaspoons Black Pepper

Preparation

Place greens onto a large plate or into a wide salad bowl. Top with apples, feta, and pecans. Garnish with red onion on the side, if using. Drizzle with balsamic dressing just before serving.

For the dressing: Whisk all dressing ingredients together in a bowl until sugar dissolves and dressing comes together and emulsifies. This dressing recipe makes quite a bit more dressing than needed for this salad. Store leftovers in refrigerator in an airtight container or jar.

My husband and I enjoyed this salad, though I did need a little more brown sugar in the dressing (I prefer balsamic vinaigrette’s on the sweeter side). I also used homemade sugared pecans for the nuts since that is what I had on hand. But very tasty and will eat it again!
