Zucchini Pizza (Who Needs Crust When You Can Use Zucchini!)

Description

Instead of calling it a pizza crust, we will say this is a pizza base.

Ingredients

  • 5 whole Zucchini
  • Olive Oil, For Drizzling
  • Salt And Pepper
  • 1 cup Marinara Sauce
  • 1 cup Grated Mozzarella
  • Other Additional Toppings (optional)

Preparation

Some topping ideas: pepperoni, salami, sausage, mushrooms, olives or any other topping you like

Preheat oven to 450ºF. Cut off ends of zucchini and slice lengthwise into 4 pieces. Place on a baking sheet. Drizzle with olive oil, salt and pepper to taste. Lay flat on the pan. Spoon about 1 tablespoon of sauce over each zucchini slice until the entire slice is covered. Sprinkle with approximately 1 to 2 tablespoons of mozzarella. Top with any toppings you like or none at all. I had salami so I used that. Bake for 15–20 minutes, until brown and bubbly! Serve, but be careful not to burn your tongue.

I am 8 months pregnant, craving pizza, and recently diagnosed with gestational diabetes (read no carbs, no crust)! I cannot wait to try this tomorrow night, and am so happy for this awesome idea!!

Sadly my husband is deployed so I had to wait to make them myself…but man am I glad I made them…this recipe is fabulous! Thanks for such a great idea!

I have to say, I was very skeptical because I really love pizza crust. But, now I can barely breathe after eating almost our entire dinner by myself. My husband loved it too… at least what I left for him! :)

I made this tonight and it was so yummy! I’m watching what I eat (on Weight Watchers)and this was a great low cal alternative to pizza. I used the Pam Olive Oil spray instead of straight up oil. Delicious!

The idea of this is just awesome, what a tasty low carb alternative to everybody’s favorite junk food! I would use maybe one or two less zucchini as I wanted the “crust” to be a little more thin.
