WOW! To say these were good would be an understatement!!! I didn’t use any olive oil and I put salt, pepper, oregano and basil on the cut zucchini. Then the marinara with low fat mozzarella cheese, mushrooms, onions and green pepper…topped with a couple turkey pepperoni! Me AND my 2 year old loved them…this will be how I serve these toppings from now on…in my opinion they were better than any crust I’ve ever had! Next time I make these I am going to use zucchini and also try to use some eggplant rounds as crusts as well. MAKE THESE NOW…they are that good!

The idea of this is just awesome, what a tasty low carb alternative to everybody’s favorite junk food! I would use maybe one or two less zucchini as I wanted the “crust” to be a little more thin.

I made this tonight and it was so yummy! I’m watching what I eat (on Weight Watchers)and this was a great low cal alternative to pizza. I used the Pam Olive Oil spray instead of straight up oil. Delicious!

I have to say, I was very skeptical because I really love pizza crust. But, now I can barely breathe after eating almost our entire dinner by myself. My husband loved it too… at least what I left for him!

i agree…these look amazing…nothing better than zucchini and tomatoes…add cheese and meat, can’t go wrong! Can’t wait to try these tomorrow night!

I’m sorry for double posting…but I am 9 months pregnant and I would seriously pay someone good money to go to the store and make me these tonight lol….I am going to be thinking about these for the next 20 hours, until I can make them myself….seriously torture!

You could go healthy too with low fat cheese and veggies on top. Definitely will try! Low carb dieters will love that.

Wow….thanks for all the compliments ladies!!! They really are delicious!! Even my hubby likes them and he’s more of a meat and potatoes kinda guy!! PS Sarah~being 9 months pregnant should give you some sort of leverage….to get what you want….right???? ;D

Sadly my husband is deployed so I had to wait to make them myself…but man am I glad I made them…this recipe is fabulous! Thanks for such a great idea!

I am 8 months pregnant, craving pizza, and recently diagnosed with gestational diabetes (read no carbs, no crust)! I cannot wait to try this tomorrow night, and am so happy for this awesome idea!!
