Description

Whole wheat pita filled with veggies, avocado, and feta cheese. Then topped with tzatziki sauce. Healthy and delish.

Ingredients

  • FOR THE PITA SANDWICH:
  • ½ whole Cucumber
  • ½ whole Red Bell Pepper, Sliced
  • ½ cups Shredded Purple Cabbage
  • ½ cups Shredded Green Cabbage
  • 1 whole Tomato, Sliced
  • 1 whole Avocado
  • 2 pieces Whole Wheat Pita Bread
  • ½ cups Crumbled Feta Cheese
  • ½ cups Arugula
  • FOR THE TZATZIKI SAUCE:
  • ½ whole Cucumber
  • 1 cup Plain Greek Yogurt
  • ½ Tablespoons Diced Garlic
  • 1 Tablespoon Fresh Chopped Dill
  • 1 teaspoon Lemon Juice
  • 3 dashes Salt
  • 3 dashes Pepper

Preparation

For the pita sandwich:

Leave the skin on the cucumber and slice it in fairly thin slices.

Cut the red bell pepper in thin strips. Slice the purple and green cabbage, and the tomatoes.

Then cut the avocado in half. Using a spoon, scoop out the avocado from each half and slice it in about ½ inch thick pieces.

Cut the pita bread in half and carefully open each piece so that a pocket forms. The bread tends to be delicate so be careful that it doesn’t tear.

Add the avocado, tomatoes, feta cheese, cucumber, red bell pepper and both cabbages; top with the arugula. Set aside.

For the tzatziki sauce:

Cut the skin off of the cucumber and hollow out the middle to remove the seeds. Dice the cucumber.

In a medium bowl, add the yogurt. (If using regular yogurt, strain out the excess liquid). Then add the diced cucumber, garlic, dill, and lemon juice. Stir together, and salt and pepper to taste.

Top the pita sandwich with the tzatziki sauce. Serve with a side of arugula topped with the leftover veggies and more tzatziki sauce.
